Atta flour is a type of white flour that is milled from semi-hard wheat (also referred to as durum wheat) and comprises a higher protein content (typically 11.5-13%) and greater elasticity then regular flours. The higher protein content is directly related to a higher gluten content.
The elasticity of atta flour makes it good for producing a strong dough that can be rolled out thin. Atta is the bread flour that is used all throughout India and Asia to make various types of flat breads though our Atta flour is milled in Australia using Australian Durum wheat.
Recipe Ideas:
Atta is most commonly used to make South Asian style flat breads such as chapati, roti, naan and puri.
