Xylitol is a sugar alcohol (not made of alcohol) made from the birch tree and has quietly become one of the worlds most popular sugar substitutes over the past 10 years. It was first used in Finland during the second world war due to sugar shortages where the Finnish people of the time extracted the substance from the plentiful Birch trees in area. During that time it was noted that there was a decrease in tooth decay and this was thought to be due to the xylitol having less harmful effects on teeth then traditional sugar. After this, more studies were done in the benefits of xylitol where it was found to have less impact on blood sugar in the body then regular sugar.
Xylitol is used as a sugar alternative in cooking and is also the main sweetener used in chewing gum.
In baking it can be used in the same way you would use regular or caster sugar to make cakes, biscuits, mousses, tarts and pies, even banana bread. It can also be used to sweeten drinks such as smoothies, tea, coffee or shakes.
