Candied fruit has been around since about the 14th century.
The process of production sees small pieces of orange and lemon peel placed in heated sugar syrup, which absorbs the moisture from within the fruit, eventually preserving it. Depending on the size of the peel, the preserving process can take serveral weeks to months. This ensures it can retain its quality for about one year.
