Pitted Dates

Recently, dates have found popularity in the raw food cooking community, due to their naturally sweet caramel flavour and sticky texture. They are perfect for making energy balls and slices as they can be pressed easily into shape with other ingredients. Dates and almond meal mixed together make the ideal base for raw cheesecakes and they are used in many other raw cake recipes as they bind well with most ingredients.

Dates have a higher cell protecting anti-oxidant than most other dried fruits.
