Orecchiette can be used in any traditional pasta recipe but is especially tasty with a simple tomato based Italian sauce such as the traditional styles of ‘arrabiatia’ or ‘Napoletana’. It also goes well with a homemade basil pesto, tossed with rocket and parmesan cheese.
